Avocado Pesto

1 Can Chicken Broth
1 Shallot
1 Avocado
¼ Cup of Dried Basil
2 Tbsp Lemon Juice
Pepper

Boil chicken broth, lemon and basil for two minutes. Add chopped shallot and avocado. Simmer for 10 min, adding pepper to taste. Remove from heat and pour into blender or food processor. Pulse till slightly bumpy. Serve immediately.
